Vincent discusses the eatery’s concept and how this is deeply rooted in quality. “Personally, my main objective as Co-Founder of Tartares&Co is the development of the brand, but on a daily basis it is much more than that: it is to ensure that each and every client spends a magical moment, which will enchant their day. The restaurant business does not escape this. New products are starting to appear such as seeds, vegetarian or vegan options and insects in particular. It is not impossible to imagine, in the near future, that we will be working with these products and therefore offering new flavours and textures. “In the current market, it is also necessary to take into account the change in consumers’ consumption habits, such as take-away, home delivery, increase in the number of visits in neighbouring shops or even a lower purchasing power. All these factors are to be taken into account and measured daily, to offer our customers the solution best suited to their needs.” Seeking to build upon the success of this already flourishing brand, Vincent and his team have bold plans for the future, as he is proud to conclude. “Overall, it is in our genes at Tartares&Co to continue our development, since even before the opening of our very first restaurant in 2014, the general idea was to offer the concept in all major cities and capitals in Europe, or even worldwide. This has already begun, and currently our third restaurant is set to open its doors end of 2019 in Lausanne.
