The Bar at The Dorchester Hotel has launched two exceptional spirits designed to offer a refined taste of true British quality.

For the first time, Dorchester Collection’s iconic British hotel, The Dorchester is offering a rare cask of single malt Scotch Whisky, Caol Ila, which has been distilled exclusively for the hotel and is available from The Bar at The Dorchester. 

Having partnered with Caol Ila Distillery in Islay, Scotland, Caol Ila has been distilled, matured and bottled by Douglas Laing & Co, the creator and purveyor of the finest Scotch Whiskies since 1948. Carefully selected by the hotel’s legendary bar manager and expert alchemist Giuliano Morandin, Caol Ila Whisky delivers tasting notes of soot and ash with a beachy quality and a peppery tongue. A 70cl bottle of Caol Ila Whisky can be bought for £150.

Caol Ila has been distilled, matured and bottled in Scotland by Douglas Laing & Co, the creator and purveyor of the finest Scotch Whiskies since 1948. This exquisite whisky delivers tasting notes of soot and ash with a beachy quality and a peppery tongue, perfectly encapsulating authentic terroir craftsmanship and distinct flavour. Distilled in September 1996, the exclusive hogshead cask will break down into 312 bottles available only to The Bar at The Dorchester. Originally a 250 litre cask, the maturing process means that some of the liquid is lost leaving 220 litres.

Whisky experts recommend the addition of water to fully appreciate the complex aromas and flavours of the spirit. The same experts say it’s best to use the water that made the whisky or water from the source with the same chemistry to ensure that the true and original character of it is retained. To accompany the Caol Ila Whisky, Giuliano and his team recommend Uisge Source water from the Ardilistry Spring in Islay, just a couple of miles from the Islay distillery where the Caol Isla Whisky is sourced.

In conjunction with the Caol Ila whisky, The Dorchester, has revived the historical recipe for Old Tom gin to create a new blend, distilled exclusively for The Bar at The Dorchester by The City of London Distillery. Perfected by the hotel’s legendary bar manager and expert alchemist Giuliano Morandin, the blend has been enhanced with juniper, coriander, angelica root, orris root, cassia bark, cardamom and fresh lemon and orange peel. It has a fruity and refreshing mouthfeel and a clean, sweet aroma, making it ideal for sipping alone or combining with a refreshingly tart tonic water. A 700ml bottle of The Dorchester Old Tom Gin is priced at £65 and is available at The Bar at The Dorchester.
