Our head chef Murilo has been with us now for over two years (which in today’s environment is a minor miracle) and commands the highest standard of dish and service.” As evidenced, staff are crucial to the success of any establishment in the hospitality industry, and in a market with high staff turnover Sean is understandably proud of Cuchulainns of Ongar’s high staff retention and supportive internal culture. “Uniquely in the restaurant market, at Cuchulainns of Ongar we are lucky to have the same core group since we opened and have had some really amazing people don the logo of Cuchulainns throughout the years. The team of the two Rebeccas (both Murphy and Kennedy) have been with is from the start and both are vital cogs in our machine. They have both embraced the vision we have for the place and have nurtured it more than any manager would be expected.” Looking ahead, Sean firmly believes that Cuchulainns of Ongar will continue to prosper, and he hopes to drive expansion of the group to include a chain of similar establishments to meet the needs of clients in the ever-changing restaurant market, as he is proud to conclude. “Going forward and knowing we have four good years of building behind us, we continue to grow and learn how to better ourselves. With that said, we do like the idea of one day finding the right location where we can plug and play the model we have established here in Ongar Village. A chain of Cuchulainns of restaurants was something very much in the forefront of our thinking when setting out on this journey, and it remains a key focus today. A lot of areas lack a good neighbourhood family bar and restaurant and that is something we can provide if the right location became available. “Overall, Cuchulainns of Ongar continues going from strength to strength, and that is solely down to the brilliant people of Ongar Village and surrounding areas. Had it not been for our patrons’ loyalty and encouragement it might have been easy to fold in the first couple of years.
