Raj explains how the menu grew from a few favourites into a vast list of over 170 dishes. “When we first took over Paddy’s Marten Inn over 20 years ago, we aimed to create a homely, friendly and welcoming atmosphere where guests could come and enjoy some of the finest Indian cuisine in the region. As a family run business, my mother was the only cook in the kitchen when we first started, but as we grew we hired new chefs from India. They all come from different regions, and they have enhanced the menu by adding dishes which show their creativity, flare and the tastes that make them think of home. “As a result of this, we now offer a huge menu, with a variety of dishes from across the whole of India. This attracts a range of guests, from couples and small groups of friends through to large families or work parties. No matter who they are, we aim to offer every guest the very highest possible standard of food and unbeatable service.” Offering exceptional service cannot be achieved without dedicated staff, and Raj is proud of how well the team has done and the establishment’s low turnover. “Our staff are family, and we treat them all as we do our own family members. At the end of every day we have a staff meeting where we all sit down together with a drink to talk over the day’s work. This approach has paid off, and we are fortunate to have worked with some members of our kitchen team for over 10 years.” Paddy’s Marten Inn is a creative Indian restaurant offering a vast array of dishes from across India that suit to any palate.
