Chefs Gaurav Sharma and Paresh Biswas possess over 35 years of experience working in some of the finest restaurants in India. They helped to design the restaurant's contemporary menu and work hard to deliver refined, flavoursome food that perfectly captures India’s diverse culture. The chefs understand the importance of fresh ingredients and buy organic produce whenever possible. At Spices and Spirits, the tandoori oven is used imaginatively to create innovative dishes of chicken, lamb, vegetables, and paneer. Acclaimed starters include crispy Pani Poori, fried puri balls filled with spiced chickpeas and potatoes, and Fish Amritsari, spicy battered tilapia fish pakodas.
