The story of Ajitama began in 2015, with two friends, António Carvalhão and João Ferreira, who had lived in Japan, where they fell in love with Ramen.
After returning to Portugal, there was no way to enjoy Ramen, so they decided to embark on a self-taught 13-month journey to develop their own recipe.
The next step was the opening of a Supper Club at António’s flat where they served their Ramen to 600 people.
Later they decided it was time to open their own restaurant, Ajitama Ramen Bistro.
